cake update

I am learning the best way to make a wedding cake by trial and error, mostly error but as the date is approaching I am using every birthday and celebration to experiment. Here is what I learned with the last one:

1. Freeze the baked part before trimming and icing. This is really important!
2. Use an icing that is close to the colour of the fondant you are going to lay over the cake. I made a really easy super rich chocolate icing and covered it with a light pink fondant and it had specks of dark icing coming through where I did not roll the fondant out as thick.
3. roll out WAY more fondant than you think you will ever need so you can avoid breaks
4. flowers can hide a lot of sins.carla's28bday 015carla's28bday 017carla's28bday 004I did learn that she wants the cake to be white so I will have to rethink the white flowers.  I think I will go with day lillies instead of trilliums.  Yes you can eat them!!!
